The Pacific Northwest had been my siren song for so long and stepping foot on that soil was a balm to my soul. 

Our first task, pick up our Escape Campervan. Yes, part of the dream was to drive around Oregon in a decked out campervan, waking up in nature or to the sounds of the ocean and exploring. No hotels required. It was epic!

Renting the Escape Campervan was exactly the right decision!

The Escape Campervan is Surprisingly Affordable

When we first started planning our trip I quickly realized that a car rental was going to be crazy expensive. Add that to hotel costs and I started to hesitate on my decision to vacation in Oregon. 

I’d always made the assumption that a Campervan would far exceed my budget even though I’d always wanted to travel in one. So, instead of guessing, I jumped on the site, put in my info and was pleasantly surprised. 

There are a couple different campervan models. We went with the largest campervan, the Big Sur model, with a pick up and return in Portland. We added a bedding and kitchen kit (more on that later) as well as a couple of camp chairs.

All told, we paid around $1800 for 9 nights/10 days.

While it ended up only saving us a couple hundred dollars it was worth it for the experience.

It’s a vacation home and rental car in one

The campervan comes kitted out with a queen size bed, a camp stove and a small sink. For additional fees, we rented a kitchen kit and bedding kit from Escape Campervan.

The kitchen kit included pots, pans, plates, cups, and utensils and worked perfectly well for our road trip. We bought a pour over coffee maker because for us coffee is life and an absolute must.

A solar panel on the roof powered the refrigerator so we didn’t have to lug around a cooler and worry about our ice supply and keeping things cold.

The bedding kit was a sheet, light comforter, and two pillows. We traveled in September and the nights were cool and in some areas it was COLD. The bedding kit did not work for us and we wouldn’t rent it again. 

Instead, we stopped at a large box store and bought a heavy duty blanket, a 2-inch memory foam topper (because the bed was way more comfy with it) and an extra pillow. Our nights were much cozier after that investment.

Now that we know we can pack accordingly for our next trip.

It’s A Picnic Every Day

Because we had a kitchen with us we were able to picnic at some really lovely locations. We simply found a spot we liked and set about making lunch or dinner. Sometimes, we simply stopped to make a cup of coffee and enjoy the view.

No waiting in line for a table, no crazy expensive food cost, simply find a spot, open the back of the campervan, and cook up your next meal. 

If there is inclement weather the queen bed can be converted back to seating and the van table set up to work or dine at.

I know for some that eating out is part of the travel experience and while we did go out a couple times we really enjoyed the experience of spending our time outdoors for our meals.

Sleep Under the Stars

We, unfortunately, visited the PNW while the wild fires were raging through the region which meant a LOT of hazy, smoke filled days and nights. 

However, spending our evenings tucked in the campervan (I would say around the campfire, but those were banned during our visit except for one location), reading a book, and falling asleep to the sound of nature is everything. Waking up in the trees and quiet is seriously everything for us. 

We mostly stayed in National Forest and State Campgrounds

If you love camping this is the way to go. We are not RV people (a whole list of reasons why, but for us, it just doesn’t feel like camping), however, the campervan is a great compromise between a tent and an RV. 

Traveling In The Escape Campervan Is A Lot of Fun!

It is perfect for long road trips as we proved during our epic trip around Oregon. We picked up our Campervan in Portland and from there we explored as much of the state, from mountains to shore, as we could over 10 days and drove about 1100 miles. 

Picnicking with epic views of the ocean, sleeping tucked in the woods under the shelter of some of the tallest trees, and driving to waterfalls was all part of our adventure.

Plus, the campervans all have unique and fun exterior designs. They are painted by local artists. You’ll find different designs on each van. Next time I’d love to pick my van based on the art work.

While they are very popular on the west coast of the United States (Los Angeles, San Francisco, Las Vegas, PNW, and Salt Lake City). There are locations on the East Coast as well as Canada.

The gardens will soon be full of tomatoes and cucumbers so I created this very easy pasta dish that is perfect for lunch or dinner.

Speaking of gardens, last year we planted over 80 tomato plants and about 60 of the survived and produced tomatoes. I messed up a bit and had about 40 plants that produced cherry sized tomatoes.

We had so many tomatoes all summer long. Thank goodness for recipes like this to help use them up, extras were tossed in the freezer (yes, whole without blanching) for use in winter meals.

By the way, we’re still eating those tomatoes and are planting another 30 or so tomato plants this year.

I learned real quick that 60 tomato plants is way too many.

Summer Garden Pasta Recipe

SUMMER GARDEN PASTA INGREDIENTS

• 1/2 box Bow Tie pasta (or your preference), cooked according to package directions
• 1 small-medium tomato, diced (I used cherry tomatoes that I had extra of.)
• 1/2 cucumber, chopped
• 1/2 small red onion, finely diced
• 4 ounces crumbled feta cheese
• Olive oil
• Salt & pepper

SUMMER GARDEN PASTA DIRECTIONS

Toss together pasta, tomato, cucumber, onion and feta. Drizzle with a bit of olive oil. Season with salt and pepper. Enjoy!

Yes, it really is that easy. You can make this up in no time at all. I chop and dice the veggies while the pasta is cooking.

After draining the pasta I run it under cold water for a minute or two and then toss everything together.

This easily made enough for 4 side servings with some left overs.

Summers are short here in Michigan so I do everything I can to maximize that outdoor time.

That means having a comfy and aesthetically pleasing outdoor area.

I aspire to create an inviting and comfortable space in my backyard and someday hope to be as good as This Worthey Life.  Their backyard space is life goals!!

One of our favorite outdoor living hacks is to use planter boxes with wheels so that we can easily move our flowers and herbs around for the sun and to move them indoors in the winter.

Anyways, in my quest to create that level of comfort and cozy I’ve put together a list of things that makes every outdoor space inviting.

10 ITEMS THAT CREATE AN INVITING OUTDOOR LIVING SPACE

PADDYWAX CANDLES

When a candle can pull double duty it’s almost always an immediate yes for me.

Paddywax Candles does exactly that. Enjoy the candle and once the wax is gone, clean it up and it converts into a self-watering planter!

The candles are made from clean-burning soy wax blend, fragrance oils, and 100% cotton wicks.

To create a self-watering planter after you are done enjoying the candle you’ll need to purchase two-pieces.

The first piece is the 11.5 folio candle. I’m partial to the teal color with the salt & sage scent. The candle has notes of ocean Air and citrus. It’s just a good clean scent. The second piece is a 5 oz folio candle. Thyme and olive leaf is my choice.

However, there are 4 of the large size and 4 of the smaller size in different colors and scents giving you plenty of options to mix it up!

We’re still enjoying the Folio as a candle, but will be sharing on IG stories when we convert it to a self water planter.

Lord knows I have plenty of plant starts around the house that need a new home.

LARGE OUTDOOR RUG

Starting at the ground find a fun rug to start the look you want to achieve.

The rug brings the seating area together.

Have a large outdoor area? Have a few different rugs for different seating nooks.

Most importantly, make sure the rug is safe to use outdoors in all the elements.

SIDE TABLES

You’ll need somewhere to set your Paddywax candle and your wine.

We love this side table we found on Amazon.

COZY COMFORTABLE SEATS

I have wanted one of these chairs for forever. I think they are simply the best addition to an outdoor seating area. It screams “curl up with a book and coffee or wine.”

PATIO SET

There are a number of patio sets out there. Pick the one that fits your outdoor living space and budget. Look for sets that are durable yet comfortable.

We bought a patio set made from acacia wood a few years ago and it’s still going strong.

A HAMMOCK IS A MUST

Speaking of, I highly recommend a hammock somewhere in the backyard or on the patio/deck.

The one above is my preference, but Amazon has a lot you can pick from.

I can spend hours in the hammock writing stories in my head, dreaming about far away places, and/or simply enjoying the sounds of nature.

There is no shame in taking some time to just be.

PLANT STAND

I love the height of this outdoor plant stand.

Depending on the size of your outdoor living space I recommend a couple plant stands as well as large pots of greenery of various heights.

PATIO LIGHTS

It may stay lighter longer in the summer but these patio lights just add a level of cozy ambiance when the sun starts to go down.

OTTOMAN/POUF

I love that a good ottoman/pouf can be used for either an extra seat or a foot rest.

Part of the reason you’re outside is to kick back and relax and the pouf offers the perfect foot rest.

Plus, its a great opportunity to add some splashes of color OR pick a neutral color to tie in with other decor.

Make sure the pouf is built for outdoor use and can stay out in the rain.

FIRE PIT

Nothing screams summer more than having a campfire in the back yard.

If you don’t want to fuss with finding wood, starting a fire, etc, etc. just go with a propane fire pit.

Easy, peasy. When you want a fire, turn it on, when you’re done turn it off.

Doesn’t get much easier than that and you don’t have to keep tending to the fire giving you more time to enjoy family and friend time.

How great is that?

I love how pretty this casserole looks in a cast-iron skillet, but if you don’t have one you can use any casserole dish you have on hand.

Although, I will say once you start using a cast-iron skillet you’ll be hooked. I love cooking and baking in them.

Lodge cast iron skillets are my favorite and so affordable. Plus cast iron skillets are great for cooking over the campfire.

This recipe is creamy and rich, but the secret to not having the casserole become to dry is to cook the white sauce until it’s creamy but still a bit runny.

I calculated the Weight Watchers FREESTYLE points on the WW site and this recipe comes in at 13 points per serving.

Point Calculation Note: WW/Weight Watchers has changed their point program since I calculated this recipe according to the Freestyle Plan. You’ll need to adjust the points according to your particular plan.

I looked for ways to save a few more points, but I don’t want to reduce too much because it just won’t be as delicious.

Turkey Potato Casserole Ingredients

1 Pound turkey breasts, diced
3 Potatoes, peeled and diced
3/4 cup sharp cheddar cheese
1 cup fat-free mozzarella cheese
3 Tbsp butter
3 Tbsp flour
2 Cups fat-free milk
½ Cup chicken stock
1 Tsp oregano
1 Tsp garlic powder
1 Tsp onion powder
½ Tsp paprika
Salt and pepper to taste

Turkey Potato Casserole Directions

Preheat oven to 350 degrees.

In a large skillet over medium heat melt butter, add flour and cook for 2 minutes. Slowly mix in milk and chicken stock, mixing well until incorporated.

Add oregano, garlic powder, onion powder, paprika and salt and pepper to taste.

Cook for 4 minutes or until creamy.

Remove from heat and mix in cheddar cheese and half of the mozzarella cheese.

Lightly season turkey breast with salt and pepper and mix into the cheese sauce.

Incorporate potatoes and place in the oven. Bake for 40 minutes.

Remove from oven, top with the remaining mozzarella cheese and bake for 15 more minutes.

Ingredients

Lightly season turkey breast with salt and pepper and mix into the cheese sauce. Incorporate potatoes and take to the oven.

Bake for 40 minutes.

Remove from oven, top with the remaining mozzarella cheese and bake for 15 more minutes.

Celebrate national s’mores day with one of these 9 unique s’mores recipes from Shari’s Berries. Just because summer feels like it might be winding down (I know, how DARE I even say those words) there is still plenty of time to make a delicious s’more over a campfire

I love how the creative way to make these s’mores. When we make s’mores at home we make them two different ways. Alan keeps to the original recipe of graham cracker, Hershey chocolate square, roasted marshmallow and topped with graham cracker.

I, however, like mine without chocolate but with peanut butter. Mine is graham cracker, a slab of peanut butter, roasted marshmallow and topped with graham cracker. Sounds delish, right?

Enjoy one of these s’mores after a tasty meal from the campfire.

Now that Shari’s Berries are sharing these unique s’mores I may have to change up how I’ll make my next s’more.

I think the sunshine s’more might be the first one I try to make. Anything lemon and white chocolate is a win in my book. I’m not sure I would add the lemon curd, but lemon cookies, roasted marshmallow, and white chocolate, maybe with a sprinkle of roasted coconut flakes.

The pb&c s’more caught my interest as well. I’d remove the chocolate peanut butter cup on mine, but leave it on Alan’s. I’d just replace the chocolate peanut butter cup with plain peanut butter.

Of course, we won’t go wrong with the savory s’more that uses flat pretzels and crispy bacon!

Ok, going to have to admit that I’d be willing to try most of these with just a slight variation.

Often these stories are best told around a campfire so consider this a virtual one and read why some believe that bigfoot’s cousin, Littlefoot, lives in Alabama’s Little River Canyon. (By the way, I have no proof that Littlefoot is a cousin to Bigfoot, but it sounds good)

Where and What is Little River Canyon?

Little River Canyon, located atop northeast Alabama’s Lookout Mountain, was carved out by the river after thousands of years and is one of the deepest canyons in this part of the United States.
 
A 23-mile drive runs along the canyon’s rim that offers spectacular views into the 700-foot-deep gorge. The drive features several stop-off points where you can pull over and get photographs. 

Take multiple photos and look closely. Bigfoot is the hide and seek champion so I imagine Littlefoot is as well.  There is a good chance s/he’s hiding behind one of those trees you just photographed. 

Waterfalls in Little River Canyon

You’ll find three major waterfalls in Little River Canyon, beginning with Little River Falls, located off Highway 35 next to the bridge separating the town of Gaylesville from Fort Payne.

This is your first stop on a scenic tour entering from the north.

Next is DeSoto Falls, which is located on the West Fork of the river and is 104 feet high.

Grace’s High Falls is the last of the major three waterfalls and is Alabama’s highest, at 133 feet.

Hiking Little River Canyon

Besides the beautiful falls, visitors discover that Little River Canyon is a hiker’s delight with beautiful natural forests and sandstone cliffs towering 600 feet above the canyon floor.

There are several hiking trails you can take along the edges of the canyon to get some great views of the entire canyon area.

Eberhart Point is the best starting place for hiking down to Pine Tree Hole at the bottom of the canyon.

The more adventurous can even put in there for some whitewater rafting fun.

Does Littlefoot live in Alabama’s Little River Canyon

As visitors discover, the Little River Canyon area is a land of beauty, but also legends.

One of the most interesting local stories is Littlefoot. Several years ago, a small petting zoo was in operation near Little River Canyon.

The family running the zoo ran into financial difficulties and ended up closing.

The remaining animals were being moved to another facility when an escape occurred.

A small family of monkeys took advantage of an open transport cage and ran off into the woods. Then the reports started.

The Legend of Alabama’s Littlefoot

As the legend goes, a group of rafters noticed something moving in the trees and that it appeared to be following them down the river.

A Cub Scout troop had pinecones playfully thrown at them from the treetops.

A group of hikers left their backpacks along the riverbank and returned to find their snacks missing and several small footprints in the surrounding mud.

A retired engineer from Huntsville took a blurry photo of a small hairy figure walking upright and dragging what appeared to be an Igloo cooler.

These occurrences soon became known as Littlefoot sightings.

So, when hiking Little River Canyon, remember to keep one eye on the tree branches and the other on your snacks.

DeSoto State Park

DeSoto State Park is located eight miles northeast of Fort Payne. One visit and it’s easy to see why DeSoto was voted as one of America’s Top 10 State Parks by Camping Life magazine.

The park spreads over 3,500 acres along the outer ridge of Lookout Mountain and embraces some of the state’s most dazzling natural wonders and has 12 miles of hiking trails.

I mean, if I was Littlefoot, this is a place that I would want to call home. 

Regardless if you find Littlefoot on your Little River Canyon or not you’re sure to have a fabulous time exploring the great outdoors in Alabama.

Camp: Some of the best camping in the state is found in the Upper Peninsula

Waterfalls: More than 300 waterfalls dot Michigan’s Upper Peninsula. Some are visible from the roadside and others take a bit of a hike.

The falls range in height from 5′ to 48+’. Pack a lunch and extra water because you can easily spend an entire day visiting and viewing a handful of the falls.

Rockhounding for Agates: Rockhounds flock to the Lake Superior shoreline to hunt for these iron-stained banded stones.

If you are new to searching for agates I find it easiest to look in very shallow waters for the stones since the water helps the banding and colors shine through.

Kayak: With over tens of thousands of miles of rivers and streams there is always a river nearby to go kayaking.

Fly a kite: With so many Great Lakes shoreline miles there is always a place to go fly a kite.

Swim in 4 of the 5 Great Lakes: Erie, Huron, Superior and Michigan all touch Michigan giving you the opportunity to swim in 4 of the 5 great lakes.

Micro breweries, wineries, and distilleries: There are over 100 wineries, over 100 breweries, and 20 distilleries. Both Southwest Michigan and the greater Traverse City region have a large number of brews, wines, and spirits.

Drive in movie: It’s a throwback to another era, but there are still a few drive-in movie theaters in the state. My favorite is the Cherry Bowl Drive-In in Honor.

Play Ball: Summer is baseball season and there are games happening all across the state. If you prefer to watch instead of play there are great teams here. I prefer watching minor league baseball, it’s a lot more family friendly.

Minor league teams include Great Lake Loons, Lansing Lugnuts, and West Michigan Whitecaps. Of course, if you want to watch a major league team you can’t go wrong with a visit to the Detroit Tigers.

Putt-Putt: Michigan is full of championship golf courses, but for those of us who are more comfy on the putt-putt courses there are plenty to choose from. In my opinion, putt-putt is a lot more fun and a lot less stressful.

Camping: Tents, RV’s or camping cabins are all great ways to overnight in the great outdoors. I still do some tent camping, but I’m slowly converting to a cabin.

I appreciate the quick set up of cabins, basically just show up with bedding and enjoy time outdoors. My favorite places to camp are in the Upper Peninsula and Upper Lower Peninsula, but there are plenty of campsite across the entire state.

Picnic: Pack a basket and head to a local park to enjoy lunch or dinner outdoors. There is just something very relaxing about getting away from the hustle and bustle of home to enjoy eating outside.

Visit Paradise and Hell: It’s true, you can go to Hell or Paradise or both during your visit to Michigan.

Geocache: Go on a modern day treasure hunt with geocaching. Containers of all shapes and sizes are hidden in forests, parks, and urban areas just waiting for you to find them and take a treasure from inside.

Roast marshmallows over a campfire: We are lucky enough to be able to have a small campfire in our backyard and marshmallow roasting is a regular summer event.

Check fire laws for your area and always take safety precautions. If your backyard isn’t an option, look for a hotel that offers patio fires and s’more making. Two that come to mind are Boyne Mountain and Harbor Grand.

Pick Your Own Fruit: Cherries, blueberries, raspberries, strawberries, apples, and more are available to pick during the summer and fall.

My favorite site is PickYourOwn.org which lists the farms and what fruits and veggies are ripe for the picking and when.

Shop quaint downtowns: Some of the best shopping is found in quaint downtowns around the state. I, personally, enjoy shopping in Traverse City and Petoskey, but other great areas include St. Joseph, Royal Oak and Grand Rapids.

Visit Michigan Lighthouses: There are 129 lighthouses along the shores of Michigan. How many can you see this summer?
