I’m all about keeping things simple in the kitchen so recipes on Just Short of Crazy will almost always be something the entire family will love, easy to make and, usually, customizable to make everyone in the family happy.

Maple Bacon Cupcakes Recipe

Maple Bacon Cupcakes Ingredients

4 1⁄2 tablespoons butter at room temperature
1⁄2 tablespoon bacon drippings (solid)
1 egg
5 tablespoons brown sugar
4 tablespoons maple syrup
1 1⁄4 cups self-rising flour
1 teaspoon baking soda
1⁄2 teaspoon baking powder
tiny pinch salt
1⁄4 cup milk
1⁄4 cup of cooked minced bacon

Maple Bacon Cupcakes Frosting Ingredients

4 tablespoons of butter
2 tablespoons of maple syrup
1 cup of powdered sugar

Maple Bacon Cupcake Directions 

Cook bacon in a fry pan, I cooked up 1 pound so there was exrra for toppings.

Reserve the drippings and place in the fridge to solidify.

Mince 1/4 a cup of the bacon.

Beat the butter and solidified bacon fat until light and creamy.

Add the brown sugar and maple syrup and beat well until combined.

Add the egg and beat until incorporated.

Sift the flour, salt, baking soda and powder together.

Add some of the flour and mix, then some of the milk.

Continue to alternate the dry and wet ingredients, ending with the dry.

Mix until just combined.

Fold in the bacon.

Taste and add more maple syrup, flour, or milk if needed for desired taste.

Scoop into cupcake papers.

Bake at 350 F for 18-22 minutes or until a toothpick comes out clean.

Rotate the pan after the first 15 minutes for even baking.

Maple Bacon Cupcakes Frosting Instructions

Beat the syrup and butter until combined.

Add the sugar, a bit at a time.

Whip at high speeds until combined.

Pipe or spread onto cupcakes.

Top cupcake with a piece of cooked bacon.

What I love about these cupcakes is that I usually have most of the items on hand. I may have to buy lemons, but everything else is generally in the pantry.

I love the idea of a sweet but tart cake, and these are just what you want.  Pink lemonade cupcakes are sweet with just a hint of lemon leaving your taste buds wanting more.  

Of course, given they are pink, they make an excellent choice for a baby shower, bridal shower, or girl’s birthday.

The directions for these from scratch pink lemonade cupcakes are easy to follow.

Since they are so simple to make, I always feel good about taking on that class snack list, or volunteering to make them for a party.  

It takes just a bit of work in the kitchen, and I have super moist and delicious cupcakes that everyone is raving over.  What woman wouldn’t want to be told she is a great chef?

If you prefer, you can leave the pink food coloring out and make these simply a delicious lemon cupcake.  The flavor stays the same, and they can be matched to any theme.

Pink Lemonade Cupcakes Recipe

Pink Lemonade Cupcakes Ingredients

1 cup flour
1/4 tsp baking powder
12 cup butter, soft
1/2 cup sugar
2 extra large eggs, beaten
pink food coloring
1/4 cup granulated sugar
juice of 1 lemon

Buttercream Frosting Ingredients

1/2 cup unsalted butter, soft
Juice and finely grated rind of 1/2 lemon
4 tablespoon heavy cream
1 3/4 cups powdered sugar
pink food coloring

Pink Lemonade Cupcakes Directions

Preheat oven to 350

Put 6 paper liners in a cupcake pan

In a large bowl, mix together flour and baking powder. Add butter, sugar and eggs. Blend well (can use a hand or stand mixer0 Mix in a little pink food coloring to color the batter pale pink.

Divide the batter equally into the paper liners. Bake for 15-20 minutes or until do ne.

In a small saucepan add the sugar and lemon juice, heat gently, stirring until the sugar dissolves. Cool for 15minutes.

Poke holes in the tops of the baked cupcakes and generously brush them with warm lemon syrup.

Buttercream Frosting Ingredients

In a small bowl, mix the butter, lemon juice, and lemon rind, beat with an electric mixer for 2-3 minutes, until pale.

Mix in the cream and slowly add powdered sugar. mix 2-3 minutes until light and fluffy. Add pink food coloring, if desired.

Frost cupcakes and add sprinkles

I’ve been hibernating inside ever since I returned from California. It’s way too cold for me to want to go out and play. However, I did venture out to the grocery store. While I was there I picked up a bag of lemons to make mini lemon cheesecakes.

Lemons always make me think of Spring and Summer and I knew they would be just the thing to brighten my kitchen and make some lovely treats.

Besides my little foray to the grocery store Em & I have been tucked inside working on craft projects, watching movies, cooking and baking.

Since I bought the bag of lemons I have been baking up lemony delicious treats and drinking a fair amount of lemon water.

I, surprisingly, had ingredients on hand to whip up these tasty mini lemon cheesecakes the other day.

So simple to make and done in a short amount of time.

You can make your own graham cracker crust which is fairly simple. You could also use gingersnap cookies if that is what you have in the house. That’s the great thing about this recipe. It’s pretty forgiving and flexible.

These are perfect to serve at a girlfriend brunch or dessert for your family. Pair with a bold cup of coffee and an herbal cup of tea. 

MINI LEMON CHEESECAKES

Mini Lemon Cheesecakes Ingredients

1/4 c sugar
1 8oz cream cheese, room temp
1/4 cup sour cream
zest and juice from 1/4 to 1/2 lemon
1 egg
6 mini graham cracker shells

Mini Lemon Cheesecakes Directions

1. Blend together the sugar and cream cheese. Add the sour cream, lemon zest, and lemon juice and mix well. Stir in the egg.

2. Equally divide the filling into the 6 graham cracker shells. Place on a baking sheet. Bake at 325 for 15 minutes or until centers are almost set.

3. Let cool to room temperature and then refrigerate.

That’s it, you can mix and bake in 30 minutes.

I love how simple these lemon mini cheesecakes are to make and are so very good. It’s like I put so much more time into making these then I really did. Ssshhhhh, we’ll keep that a secret between us.

Making a homemade margarita cupcakes recipe is definitely an easy way to impress your friends.  

You can brag about how these are made from scratch with no mix involved, and watch them clamor over the last one.  They are full of flavor, soft, moist, and the buttercream frosting is amazing.

You’ll start with basic ingredients for a delicious moist white cupcake.  

The addition of a bit of lime juice and tequila in the batter is what gives this margarita cupcakes recipe the twist of adult flavor.  

The light and flavorful lime and tequila buttercream icing with just a pinch of salt on top rounds out this recipe to make it feel just like a margarita.

Salted Margarita Cupcakes Ingredients

1½ cups all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
½ cup butter, at room temperature
1 cup granulated sugar
2 eggs, at room temperature
Zest and juice of 1½ limes
2 tablespoons tequila
¼ teaspoon vanilla extract
½ cup whole milk

Salted Margarita Frosting Ingredients

1 to 2 tablespoons tequila
1 cup unsalted butter, at room temperature
2¾ cups powdered sugar
1 tablespoon lime juice
Pinch of coarse salt

Salted Margarita Cupcakes Directions

Preheat the oven to 325 degrees F. Line your muffin tin with paper liners.

In a medium bowl, whisk together the flour, baking powder and salt.

In an electric mixer on medium-high speed, beat the butter and sugar together until pale, light, and fluffy for unto 5 minutes

Reduce the mixer speed to medium and add the eggs one at a time, mixing thoroughly after each one.

Scrape the sides of the bowl and add the lime zest, lime juice, vanilla extract and tequila. Mix until combined

Reduce the mixer speed low. Add the dry ingredients in three batches, alternating with the milk in two batches.

Bake for approximately 25 minutes or until just slightly golden and a skewer shows only moist crumbs attached, rotating the pan at the halfway point.

Allow cupcakes to cool for 5 to 10 minutes

Brush the tops of the cupcakes with the 1 to 2 tablespoons of tequila.

Let the cupcakes sit aside to cool completely before frosting them.

Salted Margarita Frosting Directions

Whip the butter on medium-high speed of an electric mixer using the whisk attachment for 5 minutes.

Reduce the speed to medium-low, and gradually add the powdered sugar, mixing and scraping the sides of the bowl until all is incorporated.

Give it a mix on medium speed for about 30 seconds.

Add the lime juice, tequila and salt mix on medium-high speed until incorporated and fluffy. If the frosting appears a bit too soft, add some additional sugar, one spoonful at a time until desired consistency is reached.

Frost cupcakes and garnish, if desired, with lime zest, an additional sprinkling of salt and a lime wedge.

If you want this recipe to be kid-friendly, simply leave the tequila out of the icing recipe.  Since the small amount of tequila in the batter cooks out, it is perfectly safe to enjoy without the tequila in your icing.  

A margarita cupcakes recipe is a perfect treat for a girl’s night, special birthday party, or just a sweet indulgence for adults after the kids go to bed.
