I was looking for the perfect recipe for strawberries and I happened to stumble across this delicious Strawberry Cake Roll. How can you not make it! Ive included step by step instructions and photos to make your process easy and enjoyable while baking.

So, lets give it a try and see what happens.

Recipe:

3 eggs
3 tablespoon ice cold water
5.3 ounces sugar (about 2/3 cup)
1 tablespoon vanilla
2 ounces flour
2 ounces cornstarch
1 teaspoon baking powder
1.5 pounds strawberries
8 ounces whipped cream

Whisk eggs with the cold water to a thick cream, very slowly add sugar and vanilla. Sifted flour, baking powder, and corn starch needs to be added very slowly and carefully, whisk manually (important).

Cover a baking sheet with waxed paper. Add the dough, which should be slightly ‘running’, and bake by 400 degrees for 12-14 minutes or until the dough starts browning slightly.

Meanwhile wash and cut strawberries in small pieces, carefully add whipped cream.

Prepare a clean kitchen towel Sugar it thinly and try to keep it as wrinkle free as possible.

Take the cake out and put it face down on the kitchen towel.

Moist the wax paper with COLD water and strip it off the cake. Cover the cake with strawberry cream. Take the ends of the kitchen towel in your hands and roll the cake.

Below is my journey of making this delicious cake.

All my ingredients ready to go:

5.3 ounces of sugar…I think. I had no way of measuring so I gave it my best guess.

Eggs and some ice cold water.

Cracked the eggs into the bowl, added 3 tablespoons of ice cold water and whisk like crazy.

It sure is hard to take photos WHILE whisking.

Flour and cornstarch

I added the flour/cornstarch mixture into the eggs very slowly…just a bit at a time until it was completely mixed in.

Prepping the cookie sheet

Poured the batter into the sheet. It looks like I didn’t mix it good enough….I see some color discoloration in the center…hmmmm. Well, I’m going to bake it as is and hope for the best.

Mmmmmmmm….Strawberries. My absolute favorite fruit!

Ok…ummmm, don’t think it’s suppose to look like this. Dang it!!! I think my pan is warped and all the dough slid to one end. ) Figures…I’ve been meaning to replace the pan for a while.

Now I guess I need to do it a.s.a.p. How in the world am I going to save this cake?? After thinking about it for a few minutes I came up with a solution.

I ended up just cutting off the bad end of the cake. Worked like a charm. Oh, another note. When spreading the strawberry filling on the cake DO NOT go all the way to the edges.

Here it is all rolled up and ready to eat!! SO VERY GOOD!!!
