Pasta with Peas and Ricotta Ingredients

  • 8 oz. short noodles (such as penne or fusilli)
  • 1 cup frozen peas (or 1 cup fresh peas, blanched)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • Optional: 2 slices crispy bacon, chopped

Pasta with Peas and Ricotta Directions

  1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions, until al dente.
  2. 1-2 minutes before the noodles are done, add the frozen peas (or blanched fresh peas) to the boiling water.
  3. Reserve 1/2 cup of the pasta water, then drain the noodles and peas.
  4. In the same pot, add the olive oil and ricotta cheese. Stir until the cheese is melted and well combined.
  5. Add the drained noodles and peas to the pot with the ricotta mixture. Toss well to coat the pasta with the sauce. If the mixture seems dry, add a splash of the reserved pasta water.
  6. Season with salt and any additional seasonings, such as garlic or red pepper flakes, to taste.
  7. Serve the pasta with grated Parmesan cheese and chopped bacon, if desired.
