Craving delicious pasta but trying to reduce carbs? No worries, I’ve got your back. Luckily, you can now find pre-packaged butternut squash noodles in most larger grocery stores and they are absolutely perfect for those nights when you need to get dinner on the table quickly.

Savory Butternut Squash Noodles Recipe

Of course, if you have a vegetable spiralizer, you can always make your own butternut squash “noodles” in just a few minutes. Either way, this makes a fast and delicious dinner.

This is perfect for those of us that love pasta like yours truly.

Why Use Butternut Squash Noodles? 

You may be curious about why squash noodles have become such a popular option.  For many individuals, the struggler with carbohydrates is real.

By adding in more vegetables and eliminating more of the processed foods in your diet, you are easily getting more nutrients AND cutting calories.

Serves: 4-6

Butternut Squash Noodles

Recipe Ingredients  {2 Weight Watchers Freestyle Points}

1 T. extra virgin olive oil
4 c. pre-packaged butternut squash “noodles” or make your own with a vegetable spiralizer
1 T. unsalted butter
1½ T. fresh sage, chopped
2 t. ground cinnamon
Sea salt and freshly ground black pepper, to taste.

Recipe Directions

Heat olive oil in a large skillet over medium heat. Add butternut squash noodles and cook for 4-5 minutes, turning frequently to ensure they cook evenly.

When noodles are slightly softened, remove from pan and set aside. Keep warm.  Add butter to pan and heat until melted.

Stir in chopped sage and cinnamon and cook until fragrant, approximately 2-3 minutes, stirring frequently.  Return butternut squash noodles to pan and toss to coat in sage butter mixture.

Remove from heat and season with salt and pepper, to taste. Serve immediately with your favorite entrée or as a light main course.

How to Serve Spiraled Noodles

I have shared with you my favorite recipe for preparing butternut squash.  Now how do you serve it at dinnertime?

While it is delicious by itself, you will most often want to add a good portion of protein to the meal.  They are perfect with some meatballs and marinara or a chunky meat sauce.

I’ve also added my creamy alfredo sauce and some roasted or grilled chicken and vegetables as a different option for a solid meal.
