Instant Pot Boneless Pork Chops & Mashed Potatoes Recipe

For us, this is the perfect comfort food. Tender pork chops with creamy perfectly whipped mashed potatoes is at the top of our comfort food list. 

Using the instant pot makes it that much easier to get dinner on the table without a lot of cooking and cleaning.

Instant Pot Boneless Pork Chops

Prep time: 5 minutes
Active cook time: 20-25 minutes (+ time to come to pressure + 10 minutes natural release)
Serves: 4-6

Instant Pot Boneless Pork Chops Ingredients

6 6-oz. boneless, thick-cut boneless pork chops
1 t. garlic powder
1 T. Italian seasoning
Sea salt and black pepper, to taste
1 T. extra virgin olive oil
1½ c. chicken broth
6 oz. goat cheese, room temperature and cut into chunks

Sprinkle pork chops on both sides with garlic powder and Italian seasoning. Season with salt and black pepper, to taste, and set aside.

Add olive oil to Instant Pot® and select the Sauté function.

Set to high and once the display reads “hot,” add half the pork chops and brown on each side, approximately 3 minutes per side. Transfer chops to a plate and repeat process with remaining chops.

Turn unit “off” and add the first batch of chops and chicken broth. Add the lid and set the pressure valve to “sealing.”

Select the “Manual” cooking option on the high setting and set cook time to 10 minutes. When done cooking, allow the pressure to release naturally for 10 minutes, and then do a quick release for any remaining pressure.

Remove lid and transfer chops to a serving platter. Add goat cheese to the Instant Pot® and stir until melted. Taste and adjust seasonings, as desired.

Serve immediately with some of the sauce spooned over the chops.

Instant Pot Creamy Mashed Red Potatoes

Prep time: 10 minutes
Active cook time: 8 minutes (+ time to come to pressure and 10 minutes natural release)
Serves: 4-6

Instant Pot Creamy Mashed Red Potatoes Ingredients

2 lbs. red potatoes, washed and cubed
3-4 cloves garlic, peeled and chopped
1 c. chicken or vegetable broth
Sea salt and black pepper, to taste
4 oz. cream cheese, cut into chunks

Instant Pot Creamy Mashed Red Potatoes Directions

Place potatoes, garlic, and broth in Instant Pot®. Season with salt and black pepper, to taste.

Add the lid and flip pressure valve to “Sealing” position. Select the “Manual” option and adjust setting to “high.” Set cook time to 8 minutes. When finished, allow pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.

Carefully open the lid and add cream cheese. Mash potato mixture with a potato masher or an immersion blender until blended, but not completely smooth. Season with additional salt and black pepper, to taste, and serve immediately.
