<p>What did you expect? Pumpkin Juice? Well, yes actually, who in their right mind hasn’t wanted to try pumpkin juice after reading about it for the first time in the books or seeing it so lovingly enjoyed live on the silver screen. Now even more enjoyable with the addition of a little something something from Snape’s private stores. So here we are. I present to you here 2 separate versions for pumpkin juice&#8230;with a kick.</p>



<p>The first is a straightforward rum punch roughly following the main tenet of Tiki Punches: 1 sour, 2 Sweet, 3 Strong, 4 weak. Which means 1 part citrus juice, 2 parts of something very sweet (usually syrup), 3 parts booze, and 4 parts juice/tonic/soda/etc. I feel like this one is pretty simple and doesn&#8217;t require a whole lot of elaboration.</p>



<p>The second recipe is a bit more in depth and so science-y it&#8217;s gonna feel like you’ve stepped right into potions class. It is another traditional rum punch, however this time we’re doing a clarified milk punch because why not. <p>½ oz Lemon Juice, fresh</p>



<p>2 oz Apple Cider</p>



<p><strong>Instructions</strong>:</p>



<p>Combine all ingredients in a <a href="https://amzn.to/4bIpLNg" target="_blank" rel="noreferrer noopener">shaker tin</a> with a couple large ice cubes. Shake for about 15 seconds. Strain through a fine mesh strainer into an ice filled glass of your choice.</p>

<p><strong>Pumpkin Juice Recipe Improved Version (Clarified Milk Punch)</strong></p>



<p>2 c Apple Cider</p>



<p>1 c Pineapple Plantation Rum</p>



<p>½ c Plantation OFTD</p>



<p>¼ c Lemon Juice, fresh</p>



<p>1 c Whole Milk</p>



<p>½ &#8211; 1 c <a href="https://amzn.to/3S4mS25" target="_blank" rel="noreferrer noopener">Hipstirs</a> Pumpkin syrup (based on sweetness preference)</p>



<p><strong>Instructions</strong>:</p>



<ol>
<li>Combine the cider, rums, and lemon juice in a container. In a separate container (like a large mason jar) add the milk.&nbsp;</li>



<li>Pour your rum mix, slowly, into the milk container. It must be done in this order, Do Not pour the milk into the rum mix, it wont work. The milk will, and should, curdle when you mix the two.</li>



<li>Allow this to sit undisturbed on the counter for 1 hour or in the fridge overnight to “age”.</li>



<li>After at least 1 hour strain the mixture through a coffee filter, either lining a mesh trainer or in something like a chemex. Most recipes call for you to strain a couple ounces through the filter and then transfer that initial bit back to the master batch to continue straining. I found it less annoying to simply double strain the entire mix, which has the added benefit of yielding a more clarified punch. Just make sure you use the same filter when you strain the second time. Depending on your batch size this process can take quite some time, be patient and plan accordingly. *One thing to note when doing clarified punch, that I wish was better reflected in a lot of recipes, is that the coffee filter is not doing the filtering here the milk solids are. The milk solids are extremely crucial to the process. Do not scoop them out or strain them before running the mixture through the coffee filter.*</li>



<li>This punch is fridge stable pretty much indefinitely (full disclosure I&#8217;m no scientist). When you’re ready to serve simply add the pumpkin syrup and stir. You can obviously do that as a whole batch or pour a glass of what you want and add a reduced amount of the syrup to your liking.</li>

<p>I’ve never been truly happy with most (read any) commercially available Butter Beers, nor have I been a fan of most available recipes online. That&#8217;s not to say I think they’re bad by any stretch but I find a Lot of them lean way to heavily on cream soda, and usually add more sweetness, or have so many extra steps or components in order to achieve that movie accurate and eye catching “beer” head achieved in The Prisoner of Azkaban. </p>



<p>Over the years, without much consistent effort, I’ve been trying a lot of these trying to find the one that fits just right. I can’t say that I ever really succeeded (again, for me personally) so I finally took it upon myself to make something that fit my requirements.</p>



<p>I don&#8217;t mean for any of that build up to lead you to think I’m claiming my version is the perfect, end all be all, cream of the crop Butterbeer recipe, but for me currently it is. My rules for making this were: No cream soda, No separate foam component to be slopped on top, while I know the books describe it as such, Not so sickeningly sweet you struggle to drink it past a few sips, and last but not least, Easy enough to whip up on short notice. For last minute HP marathons of course!</p>

<p>The rules I set out to follow in my attempting to create this recipe were: Tastes like butterscotch, as already mentioned be relatively easy to make, low ABV as described in the books…I could be crazy but I remember it being described at home point as strong enough to get a House Elf drunk but obviously served to children…Beer like, and last but not least, Cold as opposed to hot which is how it&#8217;s served in mugs in the books. </p>



<p>The last one is simple personal preference as I’m not a huge fan of hot beverages regardless of the season. If you want to try it hot I would suggest building it along the same lines as a Hot Butter Rum cocktail. Rambling aside, I&#8217;m pretty happy with how this turned out and I hope you’ll give it a shot.</p>



<p>As for the drink itself, it hits the right butterscotch notes, using the NA beer is fun, keeps the ABV down, obviously gives it a beer feel, and all comes together to make a pretty solid head that holds up for a solid couple minutes before starting to deflate. </p>

<p>1.5 oz Butter Washed Whiskey*</p>



<p>1.5 oz Homemade Butterscotch Syrup**</p>



<p>4 &#8211; 5 oz Erdinger Weissbrau NA Beer</p>



<p><strong>*Butter Washed Whiskey</strong></p>



<p>1 c Whiskey/Bourbon of choice (I recommend your favorite mid range whiskey/bourbon)</p>



<p>8 Tbs Butter</p>



<p><strong>**Butterscotch Syrup</strong></p>



<p>4 Tbs Butter, Unsalted</p>



<p>1 c Brown Sugar</p>



<p>¾ c Heavy Whipping Cream</p>



<p>1 Tbs Vanilla</p>



<p>Pinch of Kosher Salt</p>



<p>¾ c Water</p>



<p>¼ tsp Xanthan Gum</p>

<h2 class="wp-block-heading"><em><strong>Directions</strong></em></h2>



<p><strong>* Butter Washed Whiskey</strong></p>



<ol>
<li>In a small pan over medium low heat gently brown your butter.</li>



<li>Transfer the now browned butter to a sealable container and add your whiskey of choice.</li>



<li>Seal the container, give it a good shake, and pop it in the freezer (upside down if possible), and leave overnight.</li>



<li>Pull that container out of the freezer and strain off the whiskey into a fresh airtight container. Reserve the frozen butter for cookies or some shit.</li>
</ol>

<p><strong>** Butterscotch Syrup</strong> </p>



<ol>
<li>In a small saucepan, melt the butter and brown sugar, stirring continuously.</li>



<li>Once melted, cut the heat, and vigorously whisk in the cream, vanilla, and salt. At this stage you will have traditional butterscotch. However, we want it to be a little thinner for our cocktail. Which means from here we just want to whisk in the water.</li>



<li>Allow to cool. As, or once, it cools if you notice any separation you can use a stick blender, or regular to mix in the xanthan gum to recombine everything.</li>
</ol>

<p><strong>Cocktail:</strong></p>



<ol>
<li>Either in your glass or a larger mixing vessel (my preferred choice) stir together the butter washed whiskey and butterscotch syrup. Pour into your glass if not already.</li>



<li>Slowly top off with the Erdinger. It will foam A LOT, but in our tests it was a pretty sturdy foam that kept its shape even as it came a bit over the rim of our glass. So don&#8217;t be afraid to pour a nice head on this one!</li>

<li>My butter wash recipe is very heavy on the butter compared to a typical butter wash. This is intentional as I was trying to up the butteriness of the cocktail.</li>



<li>If you don’t want to make your own butterscotch syrup, even though it was dead easy and only took like 15 minutes, you can sub either store bought coffee style syrup or butter schnapps.</li>



<li>If you want more of a kick either up the whiskey ratio or replace the NA beer with a proper British Ale. </li>

<p>Making whiskey &amp; moonshine in North Carolina is a multi-generational affair that has a long and deep history in the state. At <a href="http://www.broadslabdistillery.com/" target="_blank" rel="noreferrer noopener">Broadslab Distillery</a>, located in the <a href="https://www.johnstoncountync.org/" target="_blank" rel="noreferrer noopener">moonshine capital of North Carolina</a>, the history continues as Jeremy Norris, owner and master distiller continues the tradition of crafting small batches of my favorite liquor.</p>

<p>The distillery is located on the family farm where, originally, a living was made selling fruit via an honor system at a roadside stand. That business model sustained the family for years, but then interstate 40 was built and the business dried up.</p>

<p>Jeremy&#8217;s granddaddy went to the still at age 5, started distilling at 13 and bootlegged up until 1950&#8217;s when he quit, but he shared dozen of distilling and bootlegging stories with Jeremy which peaked his interest. By the time Jeremy was in high school he was making wine and distilling whiskey. No one thought twice about a teenager making his own spirits. The area has a rich history of whiskey making and if your family is from the area you have ties to the tradition.</p>

<p>When people quit coming to the farm and the produce business died Jeremy&#8217;s granddad gave him the idea of starting a moonshine museum and putting in a still. At the time Jeremy didn&#8217;t have the capital to make the investment, but after he got up a bit in age he purchased 60 acres of the farm property and tended it. After two years he realized that you can&#8217;t farm small in America and make a living so in 2007, he decided to run with his granddad&#8217;s idea.</p>

<p>In 2008 he built the distilling barn and still from scratch. It took him four years to put together the entire infrastructure for the business, was licensed in 2011 and went to market on August 1st, 2012. From there, Broadslab has quickly become one of the best distillers in the state.</p>

<p>After our tour we headed back to his granddaddy&#8217;s house, which has been converted into a tasting room and gift shop, to try what Broadslab has been crafting. For our group Jeremy invited Jordan, mixologist at Chef and the Farmer, to mix up any cocktails of our choice.</p>

<p>Of course, my first choice is always an old fashioned. Jordan gladly mixed one up for me and even added a little flare to top it off.</p>

<p>As a lifelong fan of Avatar The Last Airbender (ATLA), I couldn&#8217;t be more excited about the<strong> FIRST </strong>ever live-action adaptation of this beloved classic. Surely the creators of this adaptation wouldn’t have the audacity to blatantly ignore the source material and sh*t all over a show that means so much to an entire generation who grew up on Nickelodeon. I mean who would do that…</p>



<p>…In celebration of this momentous event I thought I’d whip up a rendition of the most memorable beverage in cartoon history…Cactus Juice. No cartoon/anime has ever made me want to drink an animated, and entirely made up, beverage nearly as much as the quenchiest drink known to the ATLA gang. After all, it&#8217;ll quench ya! How could you possibly watch Momo and Sokka tripping balls around the desert and not wanna try some cactus juice of your own?</p>

<p>There is no shortage of Cactus Juice cocktails available online, however most are just a play on a margarita. Now while I understand why they end up there …desert …cactus …tequila …margarita, it makes sense. However, that doesn’t really sit quite right with me given that ATLA is an unapologetically Asian inspired cartoon. </p>



<p>They’re fighting for their lives against the tyranny of the fire nation not chilling on a beach in Cancun. Which is why I wanted to attempt a more Asian inspired take on cactus juice.&nbsp;</p>



<p>In addition to that, cactus juice, as shown in ATLA, has always resembled coconut milk to me, another thing often missed in the margarita-esque takes, that I wanted to capture here in my take. </p>



<p>This led me down a path to the sweet Japanese beverage of Yakult, basically drinking yogurt, which is also obviously white and could pass visibly as coconut milk. It has also become quite trendy as of late, on the interwebs, to mix yakult with Soju (an extremely popular Korean spirit, often fruit infused). And just like that we have our base.</p>



<p>From there I wanted to go two different ways with the drink which is why we have two separate recipes here. The first I wanted to be approachable, easy drinking, and refreshing. The second I wanted to be easy drinking, refreshing, and hopefully approachable while adding the “hallucinogenic” notes of cactus juice shown in the show. </p>



<p>What better way to do that than to incorporate absinthe? The spirit believed to be so ridiculously hallucinogenic it was literally banned in the U.S. until 2007. One year before the 2008 Housing Crisis…Coincidence? I think not! Jokes aside, there is nothing hallucinogenic about absinthe. This drink runs no actual risk of making you “trip” (unless you drink too many), but the myth/lore around it was good enough for me.</p>



<p>This brings us to the last major component, the syrup. This bit was tricky. I really wanted to stay true to the “spirit” of the show and make the syrup with prickly pears or nopales, i.e. cactus paddles, as used on the <a href="https://www.youtube.com/watch?v=6e6Trsp8zQs" target="_blank" rel="noreferrer noopener">How to Drink</a> episode on ATLA  but both of those went against my goal of approachability. </p>



<p>So, after wandering my local Meijer I landed on star fruit. Asian in origin, mildly sweet, flavor notes comparing it to a tart/sour apple or pear. Upon tasting I thought it resembled a pear more so than an apple which was perfect as my original intention, as already mentioned, was to use prickly pears.</p>



<p>All in all I’m very happy with how these drinks came together and I hope you’ll give them a go while we collectively binge Avatar the Last Airbender when it drops on Netflix. Hopefully it doesn&#8217;t bomb…but if it does we’ll just go back to collectively believing that there has never been a live-action adaptation.</p>

<p>*I’m not sure how widely available West 32 Soju is, let alone the aged version which is getting harder to find in my area, so any unflavored soju will work just as well. The aged soju simply adds a little more nuance and layers of flavor.</p>

<p>*In case of coconut allergies this drink is equally tasty with tonic water or Sprite. If using sprite you may want to reduce the simple syrup ratio.</p>



<p>***Use a quality absinthe if you’re going to try this recipe. Bad absinthe is BAD…basically only has anise as a flavor note. Good absinthe has a lot more layers to build complexity. Plus absinthe is hardly used in any cocktails so if you’re investing in a bottle it’s gonna be around for a while.&nbsp;</p>

<h3 class="wp-block-heading"><strong>Standard</strong></h3>



<ol>
<li>Combine all ingredients in a mixing glass. Add more ice than liquid, stir for about 30 rotations.</li>



<li>Strain into your glass of choice. Though I recommend either a coupe glass (8oz) or a hollowed out cactus.</li>
</ol>



<h3 class="wp-block-heading"><strong>Variant</strong></h3>



<ol>
<li>Combine all ingredients in a cocktail shaker, add a couple handfuls of ice, seal your shaker and shake for about 15 seconds.</li>



<li>Double strain into your glass of choice. Again recommending either a coupe or cactus.</li>
</ol>



<h3 class="wp-block-heading"><strong>Star Fruit Simple Syrup</strong></h3>



<ol>
<li>Combine everything in a small saucepan.</li>



<li>Bring it to a boil over medium heat then reduce to the lowest possible simmer, stirring frequently.</li>



<li>Allow to simmer for 20-30 minutes</li>



<li>From here either puree and strain through a fine mesh strainer for a thicker more potent syrup or strain the syrup as is straight from the stove.</li>



<li>Allow to fully cool before use.</li>

Add more ice than liquid, stir for about 30 rotations.</li><li id="mv_create_147_2">Strain into your glass of choice. Though I recommend either a coupe glass (8oz) or a hollowed out cactus.</li></ol><p></p><p><em>Variant:</em></p><ol><li id="mv_create_147_3">Combine all ingredients in a cocktail shaker, add a couple handfuls of ice, seal your shaker and shake for about 15 seconds.</li><li id="mv_create_147_4">Double strain into your glass of choice. Again recommending either a coupe or cactus.</li></ol><p></p><p><em>Star Fruit Simple Syrup:</em></p><ol><li id="mv_create_147_5">Combine everything in a small saucepan.</li><li id="mv_create_147_6">Bring it to a boil over medium heat then reduce to the lowest possible simmer, stirring frequently.</li><li id="mv_create_147_7">Allow to simmer for 20-30 minutes</li><li id="mv_create_147_8">From here either puree and strain through a fine mesh strainer for a thicker more potent syrup or strain the syrup as is straight from the stove.</li><li id="mv_create_147_9">Allow to fully cool before use.</li></ol>	</div>

			<p><p>*In case of coconut allergies this drink is equally tasty with tonic water or Sprite. If using sprite you may want to reduce the simple syrup ratio.</p><p>*I’m not sure how widely available West 32 Soju is, let alone the aged version which is getting harder to find in my area, so any unflavored soju will work just as well. The aged soju simply adds a little more nuance and layers of flavor.</p><p>***Use a quality absinthe if you’re going to try this recipe. Bad absinthe is BAD…basically only has anise as a flavor note. Good absinthe has a lot more layers to build complexity. Plus absinthe is hardly used in any cocktails so if you’re investing in a bottle it’s gonna be around for a while. </p><p></p></p>
