I was born and raised in Cadillac and while growing up here there was not much to do. You basically had like three options, go to the movies, bowling, or do an outdoor activity like swimming, hiking, taking out a four wheeler on the trails, fishing, skiing or snowboarding. You get the gist of it and a lot of people couldn’t afford the fancy outdoor toys including my family.

I spent a lot of time outdoors, hanging out with the neighbors and riding my bike. Thinking back on it, I now realize how few activities Cadillac had compared to the places I’ve lived since. It kind of makes me sad.

After a number of years away, I moved back last year and I’m rediscovering my hometown through fresh eyes and finding that there are so many things to do now compared to a decade ago.

Summer Fun For Locals and Visitors Alike

Camping

Cadillac offers great places to camp with a tent or camper, there are even cabin rentals on the lake!

Right between the lakes you have Mitchell State Park that offers many sites as well as some cabins. The benefit of staying at this one is you’re right between two lakes and across the street from Carl T. Johnson Hunting & Fishing Center. The center offers hiking trails and numerous events throughout the year. This summer you can take a fly fishing seminar in July. Be sure to check out the other numerous activities available this summer. Another benefit of staying at the state park is the accessibility to nearby restaurants, and most importantly, coffee. Also, downtown Cadillac is just on the other side of Lake Cadillac about 10 minutes drive away.

Another campground to check out on the lake is Hemlock Campground. I haven’t stayed at Hemlock, but I’m definitely curious to try it. It looks perfect for campers that like a bit more privacy.

Shopping and Eating

Cadillac’s charming downtown is a delightful mix of retail shops, restaurants, and coffee spots. Some of our favorites include:

Every Saturday, from 8:30 a.m. to noon, April 20 – December 28, 2024, the Woodstock Farm Fresh Market, located on Market Street in Downtown Woodstock, showcases a variety of locally grown products spanning various cultures. It’s a can’t-miss celebration of fresh food and local love.

Outdoor Music Events

From April through July, the Lantern Series takes place on the Woodstock Arts Event Green in Downtown Woodstock and features world-renowned artists. The series consists of different genres, backgrounds and ideologies. From folk to pop, from jazz to funk, there is great music to be heard!

From May through September, enjoy the Woodstock Summer Concert Series. The 2024 season is a mix of music genres. You can buy a popsicle mold on amazon.com and make popsicles all year long. Hey, there’s no time frame on a delicious popsicle so if you want to make them in the middle of the winter there is no judgement here. 

This would be a great recipe to make with the kids. Have them choose the fruit they’d like. They can measure and pour the items into the blender, push the button (I bet they’d like watching everything blend together) and help pour the fruit into the molds.

For combos that include vanilla or a spice you’ll just have to measure with your heart. I haven’t tried all these combos, but my theory is, if it’s good as pie or ice cream its probably just as good as a popsicle.

3. To remove from popsicle molds, run under hot water until they loosen up and pop out. 
4. Eat immediately. They can stay frozen longer just leave them in the popsicle mold.

The hardest part of this entire recipe is the waiting. Honestly, 2 hours is barely enough so the longer you can wait the better they should be. 12 hours would be awesome, but I totally understand that waiting that long isn’t always an option.

I mean, not to tell on myself or anything, but sometime the “popsicle” might be eaten straight out of the blender.

The recipe calls for unsweetened almond milk, but if you can substitute with any type of milk you like. If I don’t have any almond milk on hand I’ll just use the regular milk that is in the fridge.

Of course, these are best served with warmed maple syrup. We are fortunate to have friends that tap their maple trees and gift us with this sweet gift.

Try to buy maple syrup from a local vendor instead of the store. Store bought maple syrup can have high fructose corn syrup and other additives tossed in. You’ll want the pure, straight from the tree syrup for the best flavors.

Sheet Pan Blueberry Pancakes Ingredients

2 T. mild-flavored extra virgin olive oil, divided
½ large ripe banana
1 c. rolled oats
1¼ c. unsweetened almond milk
1 T. pure maple syrup (+ more to serve)
1½ t. baking powder
1 t. pure vanilla extract
2 t. ground cinnamon
1½ c. blueberries, divided

Optional:

1 c. sliced strawberries, to serve

Sheet Pan Blueberry Pancakes Directions:

Preheat your oven to 375°F and grease a small, rimmed baking sheet with a tablespoon of olive oil.

In a high-powered blender or a food processor, combine the remaining olive oil, banana, rolled oats, almond milk, maple syrup, baking powder, vanilla extract, and cinnamon. Blend until thick and smooth.

Pour the pancake batter onto the greased sheet pan and top with one cup of the blueberries.

Place in the pre-heated oven and bake until the batter is set in the center, slightly puffed up, and golden brown around the edges, approximately 20-25 minutes.

Remove from oven and cool for 10-15 minutes before slicing. Serve immediately with additional maple syrup, the remaining blueberries, and fresh, sliced strawberries, if desired. Enjoy!

Held the third Saturday in October, (October 21, 2023) all items are handmade at this premier arts and crafts showcase featuring 200 vendors from all over the United States. A wide variety of food vendors and fun activities make this a must-attend event.

Learn ways to survive in the woods at a family friendly event. This is a weekend-long experience where you can learn from 50+ different Bushcraft pros and workshops, shop various vendors and artists, listen to live music and eat great food.

INGREDIENTS (serves 8)

2 pounds of organic strawberries, chopped
1/2 cup maple syrup
1/2 cup fresh lemon juice
2 teaspoons lemon zest
3 eggs
1 can coconut milk (full fat)

DIRECTIONS (to be made a day in advance)

• Combine maple syrup, lemon juice, and lemon zest in the top part of a double broiler and place over direct heat. Heat, stirring until mixed well.
• Beat eggs with a fork.
• Add eggs to the lemon mixture and return to top of double broiler.
• Place over simmering water and cook until thickened.
• Cool on the countertop before placing in the refrigerator to chill overnight.
• Also, place a can of coconut milk in the refrigerator overnight.
• The next day, open the can of coconut milk and scoop out the coconut fat. Pour the liquid into a container to use in a smoothie or in another recipe. Do not use the liquid in this recipe.
• With an electric mixer, mix the coconut fat until it resembles whipped cream.
• Add one cup of the whipped cream to your chilled lemon curd mixture and stir until well blended. Reserve whatever whipping cream remains for another use.
• Layer whipped lemon curd sauce with chopped strawberries.

Mmmm, doesn’t that sound so very good. I bet it would be tasty with blueberries or raspberries as well. So very good.

Blueberry Almond Granola Recipe Ingredients

3 T. unsalted butter, melted
3 T. pure maple syrup
1 t. pure vanilla extract
1¼ c. rolled oats

1 t. ground cinnamon
¼ t. salt
1¼ c. fresh blueberries, divided

4. Place the baking sheet into the preheated oven and bake for 10 minutes. Remove from oven and give the granola a good stir. Return to oven and bake for another 10 minutes before stirring again. If necessary, return to oven for another 5 minutes or until the oats are golden brown. Do not overcook or the granola may become bitter.
   
5. Remove from oven and cool completely. The granola will become nice and crispy as it cools. Once cooled, serve with Greek yogurt and the remaining fresh blueberries.

Now, blueberries wont be in season here until later this summer, but I’ve had pretty good luck recently finding nice berries at the grocery store.

These look so pretty to serve and are so incredibly easy to make. These are my favorite kinds of desserts. Easy to make and pretty to look at.

If you have unexpected company and need a quick dessert this is the one to make. Seriously, you can have it done in about 5 minutes.

INGREDIENTS NEEDED:

Phyllo cups (found in the frozen section with the phyllo dough)
Prepared lemon pudding
Blueberries
Powdered Sugar

Directions To Make The Lemon Blueberry Spring Treats:

Put a dollop of lemon pudding in the phyllo cup, top with blueberries and sprinkle with powdered sugar.

That’s it. Done.

Really, does dessert get any easier. It’s almost homemade and looks so pretty to present to your guests.

What I love about this recipe is that it is so easy to switch up in so many different ways. You can change the filling or change the berries. You could even change both.

Love chocolate? Put some dark chocolate pudding in the cup and top with raspberries.

How about a cheesecake filling with chocolate drizzle and a beautiful red strawberry on top.

There are so many different varieties of ways that you could serve this dessert. I love that its very flexible and you can really use what you have on hand as long as you have the phyllo cups. Always a good idea to have a box of phyllo cup in the freezer.
