There are days that I get busy and miss lunch and by the time I realize that I’m hungry and haven’t eaten all day its the middle of the afternoon. Its too late for lunch, but too early for dinner so I’ve come up with a couple of tasty treats, one hot and one cold, that are a perfect pick me ups that can tide me over until dinner.Â
HOT: Light Iced Coffee Vanilla Oatmeal.
I used instant sugar free oatmeal and instead of adding water i just added International Delight Light Vanilla Iced Coffee and made it according to the package directions. For me, this is a great lunch or afternoon snack and took all of 3 minutes to make. If you haven’t tried oatmeal with Iced Coffee yet you are in for a treat.
COLD:Iced Coffee Cooler.
I’m not sure if this is the right name for it, but that’s what I’m calling. Just whip a 1/2 cup of whipped topping and 1 cup of International Delight Light Vanilla Iced Coffee together, pour into a tall glass, sprinkle with cinnamon and enjoy. You can use the ice cream of your choice instead and I’m sure it would be just as good. I didn’t have any ice cream, but I did have a container of whipped topping in the freezer so I used that and it was perfect!
