These are soooo good. I came across this recipe in my Gooseberry Patch Halloween magazine (great magzaine…glad I made the investment). I adjusted the recipe a bit to suit my taste; ie: added more pumpkin. You can adjust the pumpkin and spices to suit yours. The following recipe is straight out of the magazine:
Stir together milk and pumpkin in a saucepan; cook over low heat until steaming. Stir in vanilla and cinnamon. With a hand held blender or electric mixer, blend for 15 to 20 seconds, or until thick and foamy. Pour into 4 to 6 mugs or tall glasses; pour in hot coffee. If desired, top with whipped cream, sprinkle with pumpkin pie spice and add cinnamon stick stirrers. Serve immediately.
Note: I just hand mixed mine—good ‘ole muscle power, plus I don’t own a hand held blender or mixer. I also didn’t have any garnishments (very sad), but it still tasted great!
